Hot Sauce
The
famous Mexican Cholula Hot Sauce is made by Casa Cuervo S.A.
de C.V. and is instantly recognisable by the distinctive wooden
top. The sauce is all about flavour and is popularly known
as the "Flavorful Fire". Although having been around
for many years in Mexico it was only commercially introduced
into the US around 1996 but its growth has been phenomenal
and some claim that it now outsells Tabasco in the US. The
company behind this, Cas Cuervo, some of you might recognise
as the name behind Jose Cuervo Tequila.
Cholula Hot Sauce is made in Chapala, an hours drive from
the city of Guadalajara the capital of the state of Jalisco
and the center of Mexicos Tequila insustry. In fact Casa Cuervos
main product is the best selling Jose Cuervo tequila brand.
Cholula Original Hot Sauce
has been in existence for at least three generations and is
manufactured to a well-guarded
recipe that's over 100 years old. The recipe uses locally
grown pequin peppers together with red peppers and spices
blended in a delicate process that produces a perfect balance
between flavor and heat. The pequin pepper comes in around
3,600 on the Scoville Scale giving Cholula Original Sauce
a rating of around that.
According to the Cholula website, Cholula Hot Sauce was named
after the 2,500 year old city in Mexico. The term Cholula
is derived from the pre-Hispanic word "chollollan"
meaning "the place of retreat." Cholula's wooden
cap and distinctive yellow label represent the care and quality
tradition of Mexican artisanship. Cholula's intriguing packaging
has become a quality icon, a symbol recognised by millions.
